Cheese Biscuits
4 oz (125 grams) tasty cheese (I use pecorino)
1 cup plain flour
2 tablespoons S.R. flour
4 oz (125 grams) butter of marg.
1 tablespoon of lemon juice
1 teaspoon cayenne pepper
Cold water
Sift all dry ingredients into a bowl, rub in butter
and grated cheese, add lemon juice and a little
cold water, mix with a knife to a soft dough.
Make into a roll and refrigerate until firm. Then
cut into slices and bake on a greased tray 350°F
(175°C) until golden brown.
