TEA CAKE


Pour two cups of tea
over
2 cups of mixed dried fruit
2 Teaspoons of mixed spice
3/4 cup of sugar

Stir, leave at least 1 hour or up to 24 hours, the natural yeast starts to work.

Then stir in 2 1/2 cups of S.R. flour

Butter well - two log tins, cook 175 C for 20-30 minutes, until skewer comes out clean. I butter this cake and bring it to club sometimes, when I am not so lazy.
